Minced pork worked with a lemongrass, galangal and turmeric paste, wrapped in banana leaf and grilled over low coals until the leaf singes and the parcel drips clear — the north's answer to the sausage roll.
แอ๊บ (aab) is the verb: to wrap and roast in banana leaf. The north has a whole family of them — แอ๊บปลา (fish), แอ๊บกุ้ง (prawns), แอ๊บไก่ (chicken) — and the pork one is the plainest and most loved. The Lemon8 cook who breaks the dish down for beginners draws the line: แอ๊บหมู is minced pork, straight; the more obscure แอ๊บอ่องออ is the offal-and-blood version. Start here.
The banana leaf does the cooking. It steams the pork from inside while the flame singes it from outside, so the paste's lemongrass and turmeric come out through smoke. Wongnai's Joey, whose Chiang Mai recipe grills a whole kilo of it, answers the inevitable question in his comments: it's like sai ua sausage — but no coconut milk. A reader answers the second question: it eats like hor mok, only grilled instead of steamed, and wrapped instead of cupped.
And the eating is the point. Krua.co's air-fryer version finishes with a northern verdict — ลำแต้ลำว่า, delicious beyond argument — and every source serves it the same way: torn open hot, with steamed sticky rice, and if you have it, nam phrik num and a pile of blanched vegetables.

The Chiang Mai pot (Wongnai): a full kilo of fatty mince, two eggs, and a richer paste — dried chillies, garlic, shallots, lemongrass, galangal, kaffir lime zest, roasted coriander seed and a half-spoon of good shrimp paste — loosened with a coffee cup of water, parcelled at 100 g and grilled over charcoal. The air-fryer pot (Krua.co's แอ๊บจิ้นหมู): 400 g mince, four eggs, coriander roots in the paste, 120 g parcels, 200°C for 20 minutes with a flip at ten. The weeknight pot (Lemon8): store-bought northern curry paste, a spoon of toasted rice to bind, pan-grilled flat parcels — or foil in a 180°C oven when there is no leaf to be had.
The eggs. One per 500 g of pork (Cheewajit), two per kilo (Wongnai), or a gluttonous four per 400 g in Krua.co's air-fryer version. The egg binds the mix and keeps the parcel tender; northern home cooks add as many as the richness of the pork demands.
Shrimp paste in the paste. Wongnai's Chiang Mai paste works in half a spoon of กะปิ, plus kaffir lime zest and roasted coriander seed. Cheewajit's cookbook paste is pure herbs — chilli, lemongrass, galangal, turmeric, shallot, garlic — and Krua.co's lands in between, dropping the shrimp paste but adding coriander roots. The herb core is the constant.
How it's seasoned. Fish sauce alone (Cheewajit), or fish sauce plus a spoon of ผงปรุงรส seasoning powder (Wongnai, Krua.co). The powder is the shortcut that makes the northern funk friendlier; the cookbook pot stays old-school.
Toasted rice. Lemon8's home version adds a spoon of ข้าวคั่ว — toasted rice powder — to bind the mix and add a nutty edge. None of the three traditional sources use it; it is an Isan habit leaking north, harmless but not orthodox.
The cooking. Low charcoal for 30 minutes (Cheewajit, Wongnai), a 170°C oven (Cheewajit), a 200°C air fryer with a mid-cook flip (Krua.co), or a covered pan and even foil (Lemon8). Every source agrees on the principle: low and slow, never a hard sear.
